Saturday and Sunday mornings, the oven turns out skillets, flatbreads and pastries while the coffee flows.

About weekend brunch

Brunch started as a staff meal. On Sunday mornings the cooks would crack eggs into a cast iron pan of leftover tomato sauce and slide it into the still-warm oven. Guests smelled it and asked, and now the weekend dining room fills by 10:15.

Expect cast iron skillets straight from the embers, soft-scrambled eggs on oven bread, and pastries from our Boulder bakery. We take reservations for brunch and keep the bar open for walk-ins.

How the kitchen makes it

The fire sets the rhythm of every service. Here is what happens before your plate reaches the pass.

  1. Bank the coals overnight

    Saturday's dinner fire is banked so the oven still sits near 400 degrees at 8 am.

  2. Bake in cast iron

    Shakshuka goes into the oven in individual pans and comes out bubbling in six minutes.

  3. Serve it sizzling

    Skillets reach the table in the pan, so bring an appetite and mind the handle.
