A 140-bottle list that leans toward the eastern Mediterranean, plus cocktails that borrow a little smoke from the hearth.

About wine and cocktails

Our beverage director, Tomas Reyes, built the list around the wines that grow near the food we cook: Assyrtiko from Santorini, Xinomavro from Naoussa, Cinsault from the Bekaa Valley and a handful of excellent Colorado bottles from the Grand Valley AVA.

Cocktails use the hearth, too. We smoke rosemary, char citrus and infuse honey over the embers. Zero-proof drinks get the same attention, with house sodas and a non-alcoholic spritz that does not taste like an afterthought.

How the kitchen makes it

The fire sets the rhythm of every service. Here is what happens before your plate reaches the pass.

  1. Infuse over the embers

    Honey and syrups rest beside the hearth for a day to pick up gentle smoke.

  2. Taste every Tuesday

    The bar and kitchen taste new bottles together before anything reaches the list.

  3. Pour at the right temperature

    Reds are kept at 60 degrees in our cellar, whites at 48, so nothing arrives too warm.

Yes, $25 per 750ml bottle with a two-bottle limit per table. We waive one corkage fee for each bottle you buy from our list.

Colorado law allows you to re-cork and take home a partially finished bottle from your meal. We do not sell sealed bottles to go.

The chef's feast has an optional pairing of four half-glasses for $38 per guest.

Pull up a chair by the fire.

Tables open 30 days ahead. Walk-ins always welcome at the bar and the hearth counter.
